I made a couple changes to the recipe, like using almond flour instead of all-purpose flour to coat the chicken and I used ghee (aka clarified butter) instead of regular butter. If you follow the link, you have to read down a little to learn about ghee and why it's legal in the paleo diet, but it's quite interesting. I just recently discovered ghee and now I use it to grease my pan for my eggs every morning instead of olive oil. Someday I'll even try to make my own ghee, but maybe when I have a little more time!
